This allows you to monitor the simmer and prevents the pressure from breaking the raft. Reduce the heat to the lowest possible setting. The liquid should barely tremble—a 'smile' on the surface—maintaining a temperature of 85°C to 90°C. Simmer undisturbed for 45 to 60 minutes. The liquid bubbling up through the chimney should be perfectly clear.

Section 5: Final Filtration and Degreasing

Once the flavor is concentrated and clarity is achieved, turn off the heat. Carefully ladle the liquid out through the chimney, passing it through a chinois (fine-mesh sieve) lined with three layers of damp muslin or cheesecloth. Do not pour the pot, as the weight of the raft will force impurities through the filter. Finally, remove any trace droplets of fat by lightly dragging a piece of clean paper towel across the surface of the strained liquid. Season with fine sea salt only at this final stage.
